Picnic with crepes and muffins!!!

Lesson of the week: Don’t trust weather.com.  Take the weather as it comes.

Two weekends ago, the weather was miserable: downpour all day long.  Sick of being stuck inside, I immediately sent a mass e-mail to all my friends about a picnic for the following Sunday.  What I didn’t do was make sure the weather was okay.  Forecast for Sunday on Monday prior: rain and cold….. Oops. I wasn’t deterred because they are off in predictions sometimes and hoped my instincts were right.  Sadly, I checked the weather everyday until Thursday to find no significant changes  -forecast of rain and temperatures in the 40s….  I sent an e-mail later that day cancelling the picnic, and I made alternate plans to go hiking on the Billy Goat Trail (you can hike in any weather) and tutor kids.

Sunday comes and what do we get? PERFECT weather in the 70s with not a cloud in the sky.  An amazing day.  Even though hiking was nice, I was bummed about cancelling the picnic.

The weather has been so nice since last weekend, I organized a picnic (for real this time) in Meridian Hill/Malcolm X Park today.


Crepes– This is my go-to recipe for crepes. It never fails! Plus, I love Alton Brown.

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 1 cup flour
  • 3 tablespoons melted butter
Combine all ingredients and stir well. Let batter sit for an hour to allow air bubbles to rise (prevents tearing of crepe).  Heat non-stick skillet over med-low heat.  I didn’t grease the skillet because it made the crepes a bit greasy and the crepes came off the surface fine without it.  Pour batter with a ladle and use it or tilt the skillet to circulate the batter.  Cook until spatula can slip under the crepe easily (20-30 seconds).  Flip and cook on that side for 10 seconds.  Remove from skillet.  Allow for crepe to cool.
Cardamom sunflower muffin My roommate sent me this recipe.  It takes no all-purpose flour! You make your own flour by grinding nuts.  I modified the recipe and directions a bit from the original.
  • 1/2 cup salted sunflower seeds
  • 3/4 cup walnuts
  • 1 tsp baking powder
  • 50 g (about 4 Tbsp) butter
  • 4 Tbsp honey
  • 1 tsp vanilla extract
  • 2 tsp cardamom
  • 4 egg whites
 Set the oven to 350°F.  Grind the walnuts and the roasted sunflower seeds in a coffee grinder. Add baking powder, melted butter, honey, vanilla and cardamom.  Beat in egg whites. Divide the batter into muffin molds. Bake for about 20 minutes.

The rest: Pita chips, cookies, seasoned popcorn, blueberries, hummus, vanilla cake with hazelnut frosting, and grapes!  Mmmmm.  Delicious!!


After today’s picnic, I vowed to make it a monthly occasion.  Keep checking for what is on the menu next month!!
